Best Deviled Eggs

"I found this recipe online. I haven't made them yet, but the ingredients sound wonderful and a far cry from your everyday deviled egg. The reviews I read were excellent, with the exception being that many said it needed more mayonnaise. I guess it's a matter of personal taste. I hope you like them!"

  • Slice hard-boiled eggs in half lengthwise. Remove egg yolks to a bowl, and set egg whites aside. Mash the egg yolks until crumbly. Add sweet onion, pickle relish, mayonnaise, horseradish sauce, mustard, and salt to taste. Mix until well-combined.
  • Pipe or spoon into egg white halves. Garnish with paprika, olives, chives, parsley, and or pimento. Chill before serving.

  1. I made them the night before my New Years Party in a trial run and decided that the horseradish was a little overpowering so I reduced it and increased everything else by a little. They came out perfectly...with a nice, small horseradish kick. As usual with deviled eggs, they were the first thing to go at my party the next night!

I've been widowed since 2005. My husband and I had planned to retire in Washington, so when he passed away, I made the move for both of us, and I'm so very happy I did. I love the great, tall evergreens that are everywhere and the thousands of lakes, one of whih I can see and practically touch from my back deck. I'm the mother of a daughter, married with two gorgeous boys, ages 9 and 4, and also the mother of a 34-year old son who is enjoying the single life. My parents immigrated from Italy when they were children, and actually went through Ellis Island. I'm very proud of my Italian heritage.
