Beef Mushroom & Barley Soup

  • In a large stock pot sauté the beef and onions on high heat in oil until beef is browned and onions are translucent.
  • Add rest of ingredients and bring the soup to a medium boil.
  • Reduce to a simmer and keep soup simmering so that it is just bubbling.
  • Taste the soup after 30 minute and add additional seasoning to taste.
  • Continue to simmer for additional 60 minutes.
  • Reduce heat to low and keep warm until serving.

  1. I loved it all. I was amazed by the flavors. I was looking for it to be more of a soup than a stew so I think next time I'll add more water and bouillon. But other than that we are adding it to our home cookbooks. Thank you.
     
  2. I cooked this and the only problem I had was the liquid smoke (hence the 4 stars). It's a taste prefrence. I will, however cook this again, following exactly the recipe except leave out the liquid smoke.

  4. Outstanding recipe deserving of more attention and experimentation. It is quick and easy to make and quite delicious. I varied the recipe by substituting diced slab bacon, the meat only for sliced bacon. I also substituted bacon fat for oil. I cooked everything in a cast iron pot. My only reservation was that the end consistency was more of a "stew" than a "soup." Next time I will try to add some more water toward the end of cooking while checking to make sure the seasoning is correct. This is bold and hearty recipe that will certainly be a pallate pleaser! Please try it. Thank you.

I learned to cook out of desperation. My Grandmother was a great "Down Home" cook and she spoiled me. My Mom was into TV Dinners, yes those things that used to come on a foil tray. Yuk. My first experience with cooking actually was in Boy Scouts over a campfire. After a few times at cooking, I allways got "drafted" because all the other kids likes my cooking better. I've dome all the cooking for my family for over 30 years. and my kids are so spoiled, when they come home for college, they turn down going out and want me to cook. (Can you say "Spoiled") I only really follow a recipe when I'm baking. The rest of the time I either modify it, or I just wing it with out a recipe.
