Beef and Guinness Pie

  • 6 beef shins or 1 kg budget steak, diced
  • 3 carrots, chopped chunky
  • 2 celery ribs, chopped chunky
  • 1 onion, chopped
  • 1 leek, chopped
  • 2 teaspoons crushed garlic
  • 1 tablespoon blackberry jam (or similar)
  • 1 rosemary stick
  • 1 cup gravy
  • 1 stock, cube chicken or 1 beef
  • 1 Guinness stout (can)
  • puff pastry, x 4 sheets
  • oil

  • Brown the beef shins or diced beef in oil.
  • Place in a casserole dish with the carrots, celery, leek, onion and garlic and1 can of guinness and cook for 1 hour 30 mins at 200 degrees celcius.
  • Remove casserole dish and add the rest of the ingredients.
  • Cook for a further 45 minutes.
  • Remove the rosemary stick (rosemary should have fallen off the stick by now).
  • If unable to use your casserole dish as a pie dish, transfer all ingredients to a pie dish.
  • Top with puff pastry and cook for a further 45 minutes.
  • Remove and let settle for 5 minutes
  • Serve with mashed potato or similar.

I live in Perth, Western Australia. I am an Office Manager in a Mining Exploration Company. I love summer and going to the beach. I also like rugging up in warm clothing during winter. I love watching cable tv with my hubby on quiet nights at home. I love cooking with a glass of red wine but equally I like a beer or two! I have two cats who I adore but who live with my parents as our place is on a main road and I want them to have a long life. We have recently acquired 2 Jack Russell puppies who are so adorable. They are now part of our little family. DH and I like to get away down south of Western Australia at least 4 times a year. We are happy to stay in 5 star hotels or camp! Depends on the mood! We have recently purchased a block way down south of Western Australia in a little coastal town called Hopetoun. We are looking forward to building a house and spending a lot more time down there, with the view that we will retire down there and enjoy our fishing life. I am happy with my life and look forward to having children with my lovely husband.
