Basil Tomato Soup

This is a recipe from Ming Tsai, and is very quick and easy to make on a small budget.

ingredients
- 1 large diced red onion
- 1 tablespoon minced ginger
- 1 tablespoon brown sugar
- 4 cups diced whole roma tomatoes
- 5 cups chicken stock
- 1 cup picked basil leaves
- salt and black pepper
directions
- In a large saucepan and a little oil, caramelize the onions, ginger, and sugar.
- Add the tomatoes and bring to a simmer.
- Season with salt and pepper.
- Add the basil and puree.
- Check the seasoning.

I really enjoyed the caramelized onion and ginger in this recipe. I wasn't sure about the brown sugar, but the final product wasn't as sweet as I thought it would be. I prefer a little bit chunkier of a soup, so I left about one cup of soup out while I pureed the rest in the VitaMix and then combined them before serving. My only change would be to note in the instructions when to add the chicken stock. I began to simmer the tomatoes before realizing it wasn't in the instructions so I added the stock at that time. The fresh ingredients are what make this simple dish so amazing. I topped off my bowl with a few shreds of fresh Parmesan cheese.
