Barbequed Chicken Salad / Spread

"This was created while I was a cook at a Hospice PCU in Mesa AZ. A family member had asked if he could barbeque some chicken breasts for friends that were coming to visit his wife, along with staff and other patients able to eat. Unfortunately, when I got to work that day, he asked if I could cook them some other way as his wife was declining rapidly. I ended up baking 10 chicken breasts and this is how the portions that were not eaten ended up."

  • Cut the cooled chicken breasts into large chunks and place in food processor. Pulse until coarsely chopped. Add onion and process until well mixed. Remove mixture to a mixing bowl and stir in mayonnaise and dressing. Add the diced celery and chill for about 30 minutes. Taste and additional bbq sauce if needed. This makes a flavorful sandwich but may also be eaten on crackers.

  1. Well, I didn't quite do the chicken that way the recipe indicated, but all the ingredients were there! I used some cooked & shredded chicken breast that I had in the freezer, then chopped that up even more before adding a bit of sweet & tangy BBQ sauce to it! After that, I followed the recipe on down & we have a very delicious chicken spread! It was especially good on thick slices of nutty, whole grain bread! Thanks for sharing the recipe!Made this especially for my vegetarian son & DIL & it was a big hit with all of us!
