Banana Spice Bars

"Our favorite use for over-ripe bananas, a nice alternative to banana bread. It has a light lemon glaze that really compliments the spice and banana filled bars. *Note* Recipe edited per Laurie's Review suggestions for the glaze."

  • Cream sugar and shortening.
  • Add the rest of the ingredients and mix well.
  • Pour into a greased 9 x 13 pan and bake at 375° for 25- 30 min or until a toothpick inserted into the middle comes out clean. Spread the glaze over the top while still hot.
  • Glaze.
  • Mix butter, water, and lemon juice well. Add enough powdered sugar to make thin glaze(a little thicker than gravy).

  2. These bars are fabulous. I took them to a baptism picnic and they were gone before we ate the meal. My husband likes them better than banana bread and already asked if I could make them again this week.

  4. This was so good! I also used applesauce in place of shortening, but I also used Splenda instead of sugar. The lemon glaze set it off perfectly and everyone just loved it. The only think I may do next time is to add some chopped walnuts for a bit of texture. It is so easy and such a nice way to use up bananas. Thanks akgrown for this new favorite dessert.
     
  5. I was looking for a non-banana bread recipe that would use my too ripe bananas, and stumbled accross this one. I'm so glad I did. It was easy, wonderfully flavored, the taste of the bananas still comes through. Even my picky non-banana eating child loved it. Thanks so much for sharing this great recipe
