- Pre heat the oven to 180°C and line a small baking tin with baking paper.
- Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
- Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).
- Fill the dough into your baking tin and bake for approximately 45 minutes (or until inserted toothpick comes out clean).

This cake turned out quite nice...I used dried blueberries for the fruit and had to use 3 large bananas to get the consistency right..I cooked for about 1 hour in a fan forced oven as mine was still doughy in the middle at 45 mins...the texture is quite spongy, kind of like a microwave cooked cake but the taste was quite good. Thanks for posting!

Delicious smaller loaf. I replaced the raisins with candied lemon peel (which I want to use up now that Christmas has passed) and the sugar with Splenda. It mixes up quickly. I think I could have used a bit more moisture in the mix as the dough was rather firm and it didn't bake up as nicely as Tisme's. It was still delicious and we enjoyed it with some afternoon tea. :D

I took Tisme's hint & doubled the ingredients for a good-size loaf ~ How can you go wrong when there're raisins in it! The banana flavor was really hightened since I used 4 very ripe bananas!
