Banana Cranberry Bread

"This is the same recipe as my Recipe #96994, but uses fresh cranberries instead of zucchini."

  • Coarsely chop fresh cranberries and set aside.
  • Mash bananas and set aside.
  • In large mixing bowl, beat eggs, sugar and oil together.
  • Add flour, baking powder, baking soda, cinnamon, salt, vanilla and nuts.
  • Mix together.
  • Add cranberries and bananas and continue to mix until blended.
  • Pour into 2 greased and floured loaf pans.
  • Bake in 350°F oven for 45-55 minutes or till tests done in center with toothpick.
  • Remove to wire rack and cool for 10 minutes before removing to completely cool on wire rack.

  1. This recipe makes for a very nice tasting, moist bread! And although I did make the recipe as written, another time I'd like to try it by adding a tablespoon of orange zest, which I like in combination with cranberries! A nice keeper of a recipe, especially for the end-of-the-year holidays! [Tagged, made & reviewed as part of my theme Bread, Be It Ever So Humble! in the current My 3 Chefs event]
