  • Pancakes

  • 1 banana, peeled and sliced
  • 1 cup pancake mix
  • 12 cup water
  • nonstick cooking spray
  • Topping

  • 1 cup strawberry, sliced
  • 2 tablespoons orange juice

directions

  • :Pancakes:.
  • Place bananas in a medium bowl and mash with a fork.
  • Add pancake mix and water; stir until blended.
  • Spray large skillet with nonstick cooking spray and heat over medium heat.
  • Pour 1/4 cup batter for each pancake into hot skillet. Cook pancakes for about 2 minutes per side untill fully cooked.
  • :Topping:.
  • Spray a pan with nonstick cooking spray and heat over medium heat.
  • Cook berries and orange juice for 3 minutes or until the berries are soft.
  • Spoon topping over pancakes.

  1. What a lovely pancake recipe this is....great way to use box mixes. I added vanilla to the batter. The pancakes were thick and light and tasted of bananas. I really enjoyed the sauce, I used raspberries instead of strawberries. Thanks for sharing, made for ZWT7 for the Witchin Kitchen.
     
  2. Delightfully easy and delicious! I used gluten free baking mix and, therefore, adjusted the water accordingly to get a pancake consistency. I brought the strawberries and orange juice to a boil and then simmered the topping the entire time I was making the pancakes. I served with an extra garnish of sliced bananas and strawberries and a dollop of whipped cream (I know - not as healthy, but it was fat free :) ) Thanks for sharing! ZWT7
     
  3. These were so easy and delicious! I wouldn't have thought to use a mix with bananas, but it really worked and that strawberry topping is divine!
     
  4. I used a whole wheat blend mix for these and they turned out very nicely. The batter was a little thick so I added a few extra tablespoons of water. It was still a thick batter but the pancakes were nice and fluffy. The strawberries were a nice topping, but not the best part of the recipe :)
     
  5. Tasty and fruity pancakes! The banana flavor was subtle and the pancakes were nice and fluffy. I enjoyed the strawberry/orange topping; next time I think I'll add some pecans to the pancakes and a bit of cinnamon to the topping. Thanks for sharing the recipe!
