Baked Mediterranean Chicken

"The beauty of this dish is that it is all cooked in one pan. Serve with sweet potatoes if you wish: simply peel and chop into even pieces, toss in oil and roast for 40 mins."

  • Heat the oven to 375°F.
  • Place the chicken and tomatoes in a roasting tin. Season wih plenty of black pepper, scatter over the capers, then add the olive oil and balsamic vinegar.
  • Place in the oven and cook for 20 mins, then add the olives and cook for a further 5 mins or until the chicken is cooked through.
  • Remove from the oven and serve on four warmed plates.
