ingredients
- 3 cups carrots, grated
- 2 tablespoons margarine, melted
- 1 tablespoon lemon juice
- 2 green onions, finely chopped
- 2 tablespoons dry sherry or 2 tablespoons apple juice
directions
- Place carrots in casserole dish.
- Pour margarine, lemon juice and sherry over carrots.
- Sprinkle with green onions.
- Bake at 350 for 30 minutes.

OMG, this is almost too delicious to believe! I scaled this down to 1 serving and used butter instead of margarine, and the flavour just skyrocketed! I didn't have either sherry or apple juice, so I used water, and yet the end result was fresh, baked carrots with a very delicate natural sweetness. The lemon juice and green onions complimented the carrots absolutely perfectly. I baked this covered in a glass dish, so the carrots weren't really crisp, but just done. I can't wait to try this with apple juice and bake uncovered! Thanks Tebo... this is a PERFECT recipe!

Nice way to use up my 1/2 bag of shredded carrots, bought for some other purpose. I found the baked carrots ok, but not fabulous. I followed the recipe, only using butter instead of margarine (who uses margarine? It's deadly). I think a little ginger and maybe a splash of orange juice would help this recipe go to 5 stars.
