- 1 lb lump crabmeat (cleaned)
- 4 large hardboiled egg
- 1⁄4 cup chopped onion
- 1⁄4 cup chopped green pepper
- 1 cup mayonnaise
- 1 cup breadcrumbs
- 1⁄2 cup melted butter
- 1 tablespoon parsley flakes
- 2 tablespoons Tabasco sauce
directions
- Preheat oven to 400.
- Cook onions and peppers until tender.
- Mix all ingredients in a large bowl.
- Pour mixture into an ungreased casserole dish.
- Bake at 400 for 25 minutes.

I followed this recipe exactly except that I used packaged imitation crab meat from the meat department at my local grocer and I left out the Tabasco as I am not a fan of hot or spicy foods. The taste of the dish was good, but it was very greasy. That may have been due to the brand of mayonaise I used - I don't know. I will make this dish again but the next time I will leave out the mayo altogether and see what happens. With a little tweeking, I think I can make this one work for me. I would definitely recommend that others try it. It is great for those of us who have gotten away from frying.
