Bacon-Wrapped Cornish Game Hens With Raspberry Balsamic Glaze

"This dish a winner! Simple, easy to make and it has great presentation. I've made this 3 times so far and it's never failed. The hens cook perfectly and the taste is wonderful. #69724 makes a perfect side dish for this entree. The recipe comes from the Aug '03 issue of Gourmet. This is a great meal for entertaining! I served it for 10 this weekend and everyone loved it."

  • 23 cup seedless raspberry jam
  • 12 cup balsamic vinegar
  • 16 slices bacon
  • 4 rock cornish game hens

  • Briskly simmer jam and vinegar in small saucepan, uncovered, stirring occasionally, until glaze is reduced to about 1/2 cup.
  • About 8 minutes.
  • Cool to room temperature (glaze will thicken slightly as it cools).
  • Preheat the oven to 450 degrees.
  • Cook bacon in batches, over med.
  • heat until some of the fat is rendered but bacon is still translucent and pliable, 5-7 minutes.
  • Transfer to paper towels to drain.
  • Cut and discard back bones from each hen with kitchen shears and then halve each hen length wise.
  • Pat dry and season with salt and pepper.
  • Arrange cut sides down, in a large roasting pan.
  • Wrap 2 slices around each half hen, tucking ends under.
  • Brush liberally with glaze, reserving the remainder.
  • Roast in the middle of the oven, brushing with pan juices and reserved glaze twice (every 10 minutes), until juices run clear when a thigh is pierced, 30-35 minutes.

  1. Absolutely delicious! I only did two hens but made the full amount of glaze, and it needed it. I added some red pepper flakes to the glaze as well, but otherwise, did this as directed. It made for a beautiful meal with some roasted potatoes and asparagus. Thank you, this was lovely!

  3. This came out fantastic- I was a little worried that the aroma of the glaze was so stong, but a perfect flavor on the hen- i also cooked it on top of slices of cooked bacon to avoid sticking to the pan! thanks for the great recipe!
     
  4. This is a winner!! and leaves room to small adjustments ( difficult to get cornish game hens here) I used chicken portions. The glaze used with the bacon is great. Easy, tasteful and great for dinner parties. I served it with parslied potatoes, broccoli and sugar snap peas.

My grandmothers were very good cooks and I have fond memories of the meals they prepared. We love entertaining and nothing pleases me more than having my family and others enjoy the food I make. I love it when the house smells good with dinner or whatever is baking. I came upon recipezaar searching for a rhubarb cake recipe one day. The recipe I chose was a 5 star and my addiction began. It took a few months before I started really utilizing the site but once I did my cooking has never been the same. My family now knows all about having to rate recipes, picking their favorite chefs, etc. It's become a family thing and they have told me that I may never let my membership to Recipezaar ever end. <br /> <br />We love to travel and try to go whenever we can. Owning our own business has helped free up time where we can travel more. We've done some Europe, Canada, and much of the U.S. In the coming years I hope to do a lot more. Eating out when we are traveling is the best. I'm trying to learn more about the restaurants and chefs in places we are visiting so we can try and visit those restaurants and enjoy some of the great places our town just doesn't have. <br /> <br />The whole family loves to ski and we look forward to the season every year - it makes winter tolerable. Renting movies or just hanging out with friends is the making of a relaxing weekend for us.</p>
