Bacon-Topped Turkey Medallions

- 2 slices thick-cut bacon, chopped
- 2 turkey tenderloins, cut into 1/4 in thick medallions (1 1/4 lbs)
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tablespoons shallots, minced
- 2⁄3 cup apple juice
- 2 tablespoons maple syrup
- 1 teaspoon lemon juice
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped fresh chives
directions
- Cook bacon in large skillet over medium heat until crisp. Drain on paper towel; reserve skillet drippings.
- Sprinkle turkey with salt and pepper.
- Increase heat to medium-high; heat drippings in skillet until hot.
- Cook turkey 4-6 minutes or until lightly browned and no longer pink, turning once.
- Remove turkey, cover loosely with foil.
- Add shallots to skillet; cook and stir 1 minute.
- Add apple juice stirring to scrape up any browned bits from bottom of the pan.
- Boil 3-4 minutes or until reduced by half.
- Whisk in syrup, lemon juice and mustard.
- Boil 2 minutes or until slightly thickened.
- Stir in bacon and chives; spoon over turkey.

We loved this thanks AZPARZYCH (just wished there was more of it to eat wiith our vegies lol). The only change I made was to use white wine rather than apple juice which is something I'd never use if I bought it just for this recipe. The wine worked just fine as I'm sure chicken stock probably would have too. The finished sauce went so well with turkey.

I can only give this 3 stars 'cause I think it's missing some ingredients. Line 9 says to whisk in syrup (is that the reduction?) and where is the lemon juice in the ingredients list? Did I miss something? Therefore I improvised and got a meal on the table. I liked the flavors and the concept works. Just need additional details!

<p><span><strong>I am a stay at home mom to two wonderful boys; Joshua (8years), Kaiden (5 years), and baby GIRL, Madalynn (19 months)! I can make or will attempt just about anything, though I rarely make brownies, my husband's are the best! Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p>
<p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites. I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day! Over the past couple years with zaar, I have found tons of new recipes my family normally wouldn’t eat but have been happily surprised with new favorites.</strong></span></p>
<p><span><strong>I love to join in all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p>
<p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes. Most of all though are my kids; being home all day with them is fun and challenging, but I wouldn’t trade it for any salary!!</strong></span></p>
