Baby Greens and Garlicky White Bean Salad

ingredients
- 2 1⁄4 cups baby greens
- 1 (15 ounce) can navy beans
- 1⁄2 cup sliced onion
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 garlic clove, minced (or more to taste)
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
directions
- Chop the greens finely.
- Mix them, the rinsed and drained beans, and the onion in a bowl.
- In a smaller bowl or shaker combine the vinegar, the oil, and the garlic.
- Add the salt and pepper and mix it all well.
- Add the dressing to the greens and toss it together.
- Let it sit about 5 minutes so the tastes will meld.

YUMMY recipe! Made with baby spinach (no clue how much...I just kept adding it until it looked good), red onion, baby white beans, and red wine vinegar (all personal prefs). After sitting in the fridge overnight it made a FABULOUS lunch with a bagel. I'll definitely be making this again! Thanks for sharing!

OMG! I can't believe I love a salad so much - especially one with no cheese or creamy dressing. I doubled the dressing and left out the onion (personal taste), and used the baby greens straight out of the package instead of chopping them. Also used kosher salt, which I think makes a big difference. Thank you for this delicious, healthy main dish salad recipe!!
