Apple Pancakes

"These are really good pancakes. I got this recipe from a rogers flour cook book and its been a favorite ever since. I usually double this recipe. and freeze the left overs, the kids love them reheated in the toaster."

  1. chef nic is right, these are really good pancakes! I'm not a fan of nutmeg so I left it out & doubled up on the cinnamon. I used egg beaters for the egg, replaced 1 tbsp of oil with 3 tbps ground flax seed, then cooked half with just the apple before putting in some blueberries. Great both ways! It surprised me how many good sized pancakes I got (9) since I usually only get 6 when using white flour. I will definitely be using this recipe again

I live in Fort St John BC, I groom dogs from my home, I like to do wood crafts and card making in my spare time. I don't know that I have a favorite cook book I have many.
