  • Preheat oven to 425°; generously coat a 13 x 9 inch baking dish with butter.
  • Place on a baking sheet.
  • Sprinkle apples on the bottom of the dish and then mix with the butter and 2 tablespoons sugar until nicely coated.
  • Bake for 20 minutes, stirring occasionally so that the apples cook evenly; remove from the oven.
  • Meanwhile, combine the flour, baking powder, salt, and cinnamon on a large sheet of waxed paper.
  • In a large bowl or in a blender, beat the eggs with the 3/4 cup sugar for 1 minute, or until blended.
  • Beat in the dry ingredients alternately with the half and half.
  • Add in the vanilla and mix to combine.
  • Pour the batter evenly over the apples; sprinkle with the remaining 2 tablespoons sugar.
  • Bake for about 30 minutes, or until puffed and golden brown.
  • Sprinkle with powdered sugar.
  • Serve immediately.
