Apple Butter & Pecan Quick Bread

ingredients
- 1⁄2 cup butter or 1/2 cup margarine, softened
- 1 cup brown sugar, firmly packed
- 1 egg
- 3⁄4 cup buttermilk
- 2 teaspoons baking soda
- 2 cups all-purpose flour
- 1 cup apple butter
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1⁄2 teaspoon clove
- 1⁄2 cup pecans
directions
- Cream butter and sugar. Add egg and beat well. Combine buttermilk and soda. Combine flour and spices. Add alternately with buttermilk, beginning and ending with flour. Stir in apple butter and pecans.
- Pour into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350*F for 1 hour or until wooden pick inserted comes out clean. Cool in pan for 5 minutes; remove to wire rack and cool completely.

I used two 8x 5x2 loaf pans. The loaves were about 2 inces high after baking. Wonderful flavour and so very moist. I thought maybe the spices would be to much but they were perfect. I would suggest using parchment paper in the pan mine stuck really badly. Plus I had a hard time slicing it . It kept falling apart. I will make this again but using the tiny loaf pans or as muffins.
