- 1⁄2 cup all-purpose flour
- 1⁄2 cup whole wheat flour
- 1⁄3 cup brown sugar, packed
- 1 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄8 teaspoon salt
- 1 teaspoon ground cinnamon
- 1⁄4 teaspoon ground cloves
- 3⁄4 cup apple butter
- 1⁄3 cup low-fat milk or 1/3 cup buttermilk
- 1 egg
- 1⁄4 cup fat free egg substitute
- 1 teaspoon vanilla extract
- 1⁄3 cup flaked coconut (optional)

Glaze
- 1⁄2 cup powdered sugar
- 1 tablespoon apple juice concentrate
directions
- In a mixing bowl, combine the first eight ingredients.
- Add the apple butter, milk, egg, egg substitute, and vanilla and beat just until smooth.
- Stir in coconut if desired.
- Spread the batter into a 9x9” baking pan that has been coated with Pam.
- Bake in a preheated 350 degree oven for about 20 minutes (or until fork or toothpick inserted in center comes out clean).
- Set aside to cool.
- Prepare glaze by blending sugar with apple juice concentrate in a small bowl.
- Spread over cooled cake and cut into 10 bars.

Very yummy! I used all whole wheat flour (I cut the recipe in half) & used Splenda brown sugar. I used skim milk & used Applesauce topping recipe# 153704 for the apple butter-it's not called apple butter but the ingredients worked! Baked up nice & moist. Had a light, sweet cinnamon flavor. Am planning crumbling it over my vanilla yogurt for a treat!

Fantastic! I cannot believe I'm the first to review this yummy recipe. A sweet apple and spice snack cake, perfect for a healthy lunch box or after school treat for the kids as well as a great on-the-go breakfast. Used Crock Pot Apple Butter Recipe #143307 which is delicious, by the way. The only fat in this recipe comes from the one egg yolk, but it's still light and tender. The icing drizzle is yummy but could be omitted if desired. This is a great recipe that's been hiding for too long. Thanks, Audrey, for sharing!

I am a mother of three and live in central Pennsylvania. My children were very active in after school activities and found we weren't spending anytime together at meal time. In 1998, I decided to start cooking my dinners in a crockpot so that we could have a home cooked meal together once everyone came home. My children now get so excited to see what we are having to eat and love the smell when they walk in the door. My family calls me the crock pot queen. LOL I use my crock pot everyday of the year.

<br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list.

<br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends. It is an easy way to have friends over for dinner after classes
