Appetizing Zucchini Puffs

ingredients
- 4 medium zucchini
- 1 cup sharp cheddar cheese, grated
- 1 dash hot pepper sauce
- 4 tablespoons mayonnaise
directions
- Preheat the broiler part of your oven.
- Halve the zucchini and scoop out a little of the center.
- Combine the cheese, mayonaise and hot pepper sauce.
- Spread on top of zucchini.
- Broil until puffed.
- Cut into small serving pieces.

Nice change from too soft squash. I actually threw these together from with 10 or 12 excitedly chatting people "helping me in the kitchen". I agree that they should be precooked a tad. I also left them in the oven a liitle too long when melting the cheese so that a lot of it ran out. Think I'll scoop out a canoe shape cutting off the ends after. It's a keeper!!

Pretty yummy indeed. I love that there are so many creative dishes to the low carb diet. We love zucchini and all of the other ingredients are readily available in our home at all times. We like our zucchini with a little bit of a crunch so this was perfect. Added a dash of red pepper flakes and we were in heaven. Thanks Mirj!

Oh Mirj! I really didn't expect these to be so good!I wondered if I should cook the zucchini first, so I did broil them for about 5 mins. before I added the cheese mixture. They were a little dry, but when I added the cheese mix and broiled them for about 5 mins. they came out so yummy! Thanks for a quick and delicious recipe!!!

I'm married to a brilliant man with the most yummy British accent (this is the part where he rolls his eyes and says, Yeah, yeah, yeah). Let's call him Sushiman, even though he hates that name. <a href=http://www.recipezaar.com/member/52282>Chia</a> gave him that nickname when I was trying to create a dinner to show off my culinary talents. I posted here on Zaar with questions about the menu and since sushi was the main focus of the meal, he became Sushiman. That dinner was just the first of what I hope will become a lifetime of meals together. <br /><br />This is a picture of us taken in September 2005 in Kew Gardens in London. Sushiman has 4 kids of his own, so together that makes us a family of ten, together with my dog and my step-dog (sadly, since I first wrote this my step-dog, Honey, crossed the Rainbow Bridge). We're the Brady Bunch on speed. Not all eight live with us, but everyone is in and out all of the time, so we're thinking about replacing our front door with one of those revolving thingies.</p>
