- 1 -13 ounce cajun style andouille smoked sausage, Hillshire farm
- medium russet potato, scrubbed, cut into 1/2-inch chunks
- 1 small onions, diced small, carmelized in 1 TBS bacon grease or 1 small butter
- 2 garlic cloves, minced
- 2 beef bouillon cubes
- 2 chicken bouillon cubes
- 4 cups water
- 1 -2 cup heavy cream
directions
- Use your crock pot, stove or instant pot.
- Carmelize onion in bacon grease or butter. When done, stir in minced garlic, and cook until fragrant.
- Cut sausage lengthwise in half, then cut those in half lengthwise again. Next cut them into 1/2-inch chunks. Place in crock pot. Pour carmelized onions over sausage.
- After scrubbing potatoes, cut them into 1/2-inch dices, add to crock pot. Next add bouillon cubes and water.
- Cover, and let cook on low 4 hours. Check to make sure potatoes are cooked through.
- Stir in heavy cream, at least one cup. More may be needed.
