  • Mix the can of frozen orange juice with a half can of water.
  • Preheat oven to 350 degrees.
  • Combine flour, salt, pepper, paprika and garlic salt.
  • Coat chicken with this mixture.
  • Heat oil and butter in skillet and saute chicken until brown.
  • Remove and put in casserole.
  • To skillet, add mustard, orange juice and Amaretto.
  • Increase heat and boil, stirring constantly, until thick.
  • Pour sauce over chicken and bake, covered, for 45 minutes. this can be frozen and reheated later.

One big change we made though: we are vegetarian so we substituted vegetarian "mock" chicken cutlets by Quorn for the chicken and it turned out great. I also had to substitute 2 cups of orange juice for the concentrate because we live in the UK and can't get frozen OJ here. It took a little longer for the sauce to reduce but it was ok - I cheated and added a little cornstarch to thicken the sauce. Thank you so much for posting this recipe, we loved it.
     
  5. This is a good recipe, but it makes the chicken taste very sweet, which was something that we didn't care for. I probably won't make this again, but if you like sweet tastes you should try it at least once.
