Alpine Potatoes

"I got this out of a small cookbook put out by the local courthouse employees. It's a great Idaho potato dish!"

  • In saucepan, cook and stir butter and soup until smooth.
  • Remove from heat; add sour cream.
  • Add onions, celery, and cheese; mix well.
  • Add salt, pepper and diced potatoes; mix well.
  • Pour into 9x13 baking pan; top with potato chips.
  • Bake at 350* for 45-55 minutes.

  1. This is a great way to serve potatoes! I had 4 cups of new red potatoes, cream of mushroom soup with roasted garlic, and used seasoned bread crumbs with Asiago cheese grated in to them. Can't wait to eat the leftovers!! Thanks, Carole

  4. This looked like it would please my whole family...and it did. : ) And I used my gf version of the canned soup. Worked like a dream. I wonder how it would do in an 8" x 8" dish. I'll give that a try next time, since it was so thinly spread across the 9" x 13". Not complaining, though! Had a happy household tonight! LOL
     
  5. Inez, thanks for this recipe. Very easy to make and different from most others we've tried. I used mushroom soup because we were having it with a rotisserized beef roast and I didn't have sour cream on hand so I used cottage cheese...it melted right in...nice texture...loved the tater chip topping! M&Mers

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
