- 1 (9 3/8 inch) deep-dish unbaked pie shells (extra large)
- 1 medium onion, chopped
- 1⁄2 lb bacon
- 3⁄4 cup swiss cheese, shredded
- 3⁄4 cup cheddar cheese, shredded
- 1⁄2 cup mozzarella cheese, shredded
- 1 1⁄2 cups half-and-half
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 5 large eggs
directions
- In a preheated 425-degree oven, bake the pie shell for about 8 minutes. After removing the shell from the oven, flatten the bottom with a spatula or fork.
- Combine the chopped onion and uncooked bacon in a large skillet. Cook over medium heat until bacon is crisp. On a plate lined with paper towels, drain the bacon and onions. When cool, crumble the bacon into small pieces. Sprinkle the bacon and onions over the bottom of the pie shell.
- Combine the Swiss, cheddar, and mozzarella cheeses in a bowl. Cover the bacon mixture with the cheese.
- In a mixing bowl, whisk together the eggs, half-and-half, salt, and pepper. Pour the egg mixture over the contents in the pie shell.
- Bake in a preheated 375-degree oven for about 50 minutes, or until a knife inserted in the center of quiche comes out clean. Serve in slices either hot or warm.

<p>I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston. As much as I miss family back home, I truly love living here - the beaches, the tropical beauty, the people, and the weather (except the hurricanes!). Everyday is just another day in Paradise.
