- 1 3⁄4 cups sugar
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1 pinch ground cloves
- 1 teaspoon instant coffee (rub between fingers to break down)
- 1 3⁄4 cups flour (i use whole wheat, which results in an even denser bread)
- 1⁄4 cup rolled oats
- 1⁄4 cup cornmeal
- 1⁄2 cup canola oil
- 1⁄4 cup unsweetened applesauce
- 3 large eggs, room temperature
- 1 teaspoon vanilla
- 1 1⁄2 teaspoons baking soda
- 1⁄4 cup low-fat yogurt or 1/4 cup low-fat buttermilk
- 1⁄2 cup semi-sweet chocolate chips
- 5 very ripe bananas
directions
- Preheat oven to 350°F Spray 2 loaf pans or 1 bunt pan.
- In a large bowl, mash bananas with a masher or well-washed hands.
- Add all the ingredients except flour and chocolate chips.
- Add the flour and mixed just until combined.
- Pour half of the batter into the pan(s). Sprinkle chocolate chips evenly across the top and then add the remaining batter to the pan(s).
- Bake for 50-70 minutes, until a toothpick comes out almost clean but still collecting a few crumbs. Let cool 15 minutes after removing from oven and then remove from pan(s).
