Beans, Bow Ties, Spinach & Cheese

Ingredients

    1. 8 ounces bow tie pasta
    2. 1 tablespoon olive oil
    3. 3 garlic cloves, crushed
    4. 3 plum tomatoes, diced
    5. 1 (15 ounce) cans great northern beans, drained and rinsed
    6. 1/4 cup chicken broth
    7. 5 cups fresh spinach, baby
    8. 3/4 cup mozzarella cheese, shredded
    9. 1/2 cup parmesan cheese, grated

Directions

  1. In large skillet, heat oil.
  2. Add garlic and tomatoes.
  3. Cook & stir until tomatoes are slightly soft, about 2 minutes.
  4. Add beans, broth & spinach & cook until spinach just wilts, stirring constantly.
  5. Season with salt and pepper.
  6. Meanwhile, cook pasta according to package directions.
  7. Drain pasta and add to skillet.
  8. Add in cheeses, toss lightly & serve immediately.
