ingredients

• 3 cups shredded zucchini, with skin on
• 1 cup flour
• 2 teaspoons baking powder
• 1 egg
• 1 tablespoon water
• 3 tablespoons mayonnaise
• 1 tablespoon parmesan cheese
• 1 tablespoon breadcrumbs
• 1⁄4 teaspoon black pepper

directions

1. Mix together all ingredients.
2. Spray a loaf pan with cooking spray.
3. Add mixture to pan.
4. Bake for about 45 to 55 minutes.
5. Test with a knife for firmness.
