This is a great side dish to chicken or on its own.
- 4 cups penne or 4 cups rotini pasta
- 1 medium zucchini, chopped very small
- 1 garlic clove, finely chopped
- 3 cups shredded mozzarella cheese
- Cook pasta according to directions.
- Drain pasta and then add the zucchini and garlic. Stir well to mix. Add the cheese and stir until melted.
