Zesty Coconut Dressing

"From Mr. Food...he suggests using this dressing not only on mixed greens, but to also use it to dress steamed veggies, coleslaw or fruit salads."

• Yields: 1 cup

ingredients

• 1 (8 1/2 ounce) can cream of coconut
• 1⁄4 cup cider vinegar
• 1 (2/3 ounce) package dried Italian salad dressing mix

directions

1. Mix all the ingredients together in a small bowl.
2. Serve, or chill until ready to serve.
