- 6 large russet potatoes, scrubbed
- 14.79 ml butter
- 118.29 ml red bell pepper, diced
- 118.29 ml green bell pepper, diced
- 157.80 ml yellow onion, chopped
- 4 sliced ham, diced
- 354.88 ml shredded colby cheese, divided
- 29.58 ml milk
- 29.58 ml sour cream
directions
- Preheat oven to 400. Pierce potatoes several times with a fork. Bake until tender, about an hour. Melt butter over medium heat. Add peppers and onion; saute until tender. Add ham and saute for another 5 minutes. Reduce temperature to 350. Cool potatoes slightly. Slice tops off of potatoes and scoop out the pulp; reserve the skins. Mash pulp. Stir in 1 cup colby cheese, milk, sour cream and vegetable mixture. Spoon into potato shells. Sprinkle potatoes with remaining cheese and back until heated through, about 20 minutes.
