My Mom always made this when she had left over rice. It is simple and easy to make, but tastes wonderfull.
- 1⁄4 cup onion
- 1⁄4 cup butter
- 1 lb round steak, cut in strips
- 1 1⁄2 cups shredded carrots
- 2 cups cooked rice
- salt and pepper
- Fry onion and steak in butter until steak is just browned.
- Season to taste with salt and pepper.
- Add carrots and rice.
- Mix until heated through.
- You may add soy sauce to taste (optional).
