Whole Wheat Zucchini Bread

"modified from 100 days of whole food recipe. I added more cinnamon and applesauce for more flavor and to make it moist. ( The original came out too dry for our liking). Just adding this here for safe keeping"

  • preheat oven to 325.
  • blend all dry ingredients.
  • make a well in the middle and add in eggs,oil,applesauce,honey and vanilla. Stir until just mixed.
  • fold in grated zucchini and chopped nuts.
  • Pour batter into greased loaf pans and bake about 50 minutes, until toothpick comes out clean in center. If making muffins, bake about 15-20 minutes.
