This is a simple recipe, containing no fat! None! So go ahead and have your dessert. You could use Splenda instead of the sugar.This is not supposed to rival Cool Whip, but it is one way to be able to at least enjoy your dessert. I have not tried it with Splenda(or other sugar substitutes) but imagine it would work. Remember to put your bowl and the beaters to your electric mixer in the freezer for at lease 30 minutes before beginning this recipe. Note: I use Carnation non-fat dry milk powder, and suggest you use a good product like it to get the best results.
- 1⁄3 cup of carnation instant nonfat dry milk powder
- 1⁄3 cup ice cold water
- 1⁄4 cup granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- Chill bowl and beaters of electric mixer in freezer for 30 minutes.
- In chilled mixing bowl, combine powdered milk, ice water, sugar, lemon juice and vanilla extract. Beat on high speed until peaks form.
The recipe didn't say how long to whip it and after 8 minutes I gave up. I didn't want to burn up my mixer. I did it exactly as written and was very disappointed that it didn't thicken.
This recipe was in an old cookbook that I can not find. I have used it often as a topping for jellos that was going to be consumed after supper. I don't try to keep it overnight so it is a cheap alternate for stuff that is going to be used immediately. MUST LET BEATERS, BOWL, AND INGREGIENTS rest in fridge while having supper!
This is OK in an emergency, but no amount of beating would make nice, stiff peaks.
