Watergate Salad

"This light and tasty salad is one of my favorites, for parties or any day!"

• Ingredients: 5
• Serves: 6-8

ingredients

• 1 (3 ounce) box instant pistachio pudding mix or (1 ounce) box sugar-free instant pistachio pudding, for lower carbs
• 1 (20 ounce) can crushed pineapple, do not drain
• 1 (8 ounce) container Cool Whip, thawed
• 1 cup miniature marshmallow
• 1⁄2 cup maraschino cherry, cut in small pieces

directions

1. Add pudding mix to pineapple in large bowl (do not follow recipe on pudding box), and stir until well blended.
2. Add remaining ingredients and mix well.
3. Cover bowl and refrigerate.
4. Serve well chilled.
5. Hint: Use cold pineapple and cherries to help chill the salad faster.

I have not made this recipe, but did have it for dessert at a potluck today. The salad is sweet and creamy, very light and great dessert to finish off a meal!
