Vitamin Rich Potato Salad

- 1 large red onion (diced)
- 1 bunch parsley (chopped)
- 1⁄4 cup raw apple cider vinegar
- 1⁄4 cup extra virgin olive oil
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 3 lbs baking potatoes
directions
- Place the first 6 ingredients in a large glass bowl (I avoid using metal because of the after taste) while you are prepping the potatoes.
- Boil the potatoes with the peel. After potatoes are tender enough when pierced with fork, cut potatoes into 2 inch cubes. Mix them with the marinade and let them sit for at least an hour . Every one has a different taste towards saltiness and sourness, adjust vinegar and salt according to your. Enjoy!
