Sweet Oil & Vinegar Dressing

Decidedly sweet, this would suit a chicken salad with mandarin orange slices and toasted almonds. This used a LOT of sugar, it was hard to dissolve it all and keep it suspended. I would recommend using superfine sugar to make it easier to mix. Made for Spring 2014 Pick A Chef.
- 1⁄2 cup vegetable oil (I use about 1/8 cup olive oil and then the rest is veg oil olive oil is better for you but I think i)
- 1⁄4 cup red wine vinegar
- 1 tablespoon soy sauce (I use low sodium)
- 1⁄2 cup sugar
