Vicki's Potato Casserole

"My aunt dreamed up this yummy casserole. i love cheese and potatoes. the crackers add just enough crunch."

• Yields: 1 CASSEROLE

ingredients

• 2 lbs frozen hash browns
• 1⁄2 cup chopped onion
• 2 cups sour cream
• 1⁄2 cup butter
• 2 (8 ounce) cans cream of chicken soup or (8 ounce) cans cream of celery soup
• 2 cups shredded cheddar cheese
• salt
• pepper
• Ritz cracker, crushed

directions

1. MIX ALL INGREDIENTS TOGETHER, SAVING ABOUT 1/4 CUP OF CHEESE.
2. POUR INTO 9" X 13" DISH.
3. TOP WITH REMAINING CHEESE AND CRUSHED RITZ CRACKERS, IF DESIRED.
4. BAKE AT 350 DEGREES FOR 1 HOUR.
