- 1 egg
- 1 egg white
- 1 morningstar veggie burger
- salt
- pepper
- 1 crushed garlic clove
- Old Bay Seasoning
- 29.58 ml milk
- 1 slice soy cheese
- 2.46 ml butter
- salsa (optional)
- reduced-fat sour cream (optional)
- crushed tortilla chips (optional)
directions
- Beat egg, egg white, and milk together in a bowl.
- Add salt, pepper, old bay seasoning, and crushed garlic to taste.
- Add cheese (shredded or coarsely cut - I just pull my slice of cheese apart).
- Heat 1/2 tsp butter in skillet on med-high heat.
- Add veggie burger and break it up with your spatula while it browns. (just like you would with sausage).
- Pour egg mixture over browned veggie burger.
- Allow the entire pan to slowly cook on medium heat.
- Slide omelette onto plate and garnish with crushed tortilla chips, salsa, and sour scream.
- Mmmm!

I've been a pescetarian for over a year, and I love it. (I try to avoid seafood generally, but sometimes a girl needs a shrimp taco!)
My biggest weakness is nachos and my favorite meal is brunch. I eat fresh-cut salsa with as much food as possible.
You definitely would NOT call me a health nut, but I do try to stay in good(ish) shape and to eat reasonably well. I get along with almost anyone, as long as they don't block my path to the cheese tray!
