  • After eveything is chopped and prepared, in a large frying pan on high heat, combine margarine, peppers, eggplant, 2 teaspoons salt, basil leaves and garlic. Mix together and then cover, mixing occasionally, until a little browning starts to happen, add mushrooms and desired amount of salt and pepper. Pour in cheese, then cover and let simmer on low heat.
  • In a large saucepan, cook ramen noodles as directed on the package. Once tender, strain and add seasoning.
  • Mix your cheese into the vegetables and add more salt if needed.
  • Put desired amount of noodles in the bottom of a bowl or plate and top with desired amount of vegetable mix and enjoy!
