- 1 large eggplant (cubed)
- 1 -2 medium sized red bell pepper (chopped)
- 8 -10 small portebella mushrooms (optional)
- 4 tablespoons margarine
- half of a bag of 4 ounce bag mozzarella cheese
- 5 fresh basil leaves (very finely chopped)
- 1 clove fresh garlic (very finely chopped)
- 3 packages of instant ramen noodles (oriental flavor)
- salt & pepper
directions
- After eveything is chopped and prepared, in a large frying pan on high heat, combine margarine, peppers, eggplant, 2 teaspoons salt, basil leaves and garlic. Mix together and then cover, mixing occasionally, until a little browning starts to happen, add mushrooms and desired amount of salt and pepper. Pour in cheese, then cover and let simmer on low heat.
- In a large saucepan, cook ramen noodles as directed on the package. Once tender, strain and add seasoning.
- Mix your cheese into the vegetables and add more salt if needed.
- Put desired amount of noodles in the bottom of a bowl or plate and top with desired amount of vegetable mix and enjoy!
