For the cake
- 1 1⁄2 cups unbleached flour
- 3⁄4 cup sugar
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 3 tablespoons cocoa powder
- 1 teaspoon vanilla
- 1⁄3 cup vegetable oil
- 1 tablespoon vinegar
- 1 cup cold water

For the frosting
- 2 tablespoons earth balance butter
- 1 1⁄3 cups powdered sugar
- 1⁄3 cup cocoa powder
- 1⁄2 teaspoon vanilla
- 2 -4 tablespoons water

- For the cake:.
- Preheat oven to 350 degrees.
- Combine flour, sugar, salt, baking soda, and cocoa powder in large bowl.
- Make a well in the center then add the vanilla, oil, vinegar, and water.
- Stir until mixed well.
- Pour into greased 9x9 baking dish or cupcake pan (will make 8 cupcakes).
- Bake 30 minutes. Should pass the toothpick test.
- For the frosting:.
- Cream the 'butter' in a bowl.
- Add sugar, cocoa, vanilla, and water to make a thick but spreadable frosting.
