Turkey Quinoa Waldorf Salad

"This a delicious recipe I took from The Complete Food Allergy Cookbook by Marilyn Giovanni. I use this cookbook all the time to get some good recipes that are free of common food allergens (except nuts). This is a yummy sald that is equally as god with leftover turkey or canned. I use canned in the summer as I am not cooking so many turkeys then."

  • Mix all ingredients together except lettuce.
  • Chill and serve on lettuce leaves. Season with salt and pepper as desired.
