Tuna Pasta with Artichoke and Semi-Sun-Dried Tomatoes

  • Cook pasta.
  • Drain, and return to pan with oil.
  • Toss for 1 minute, then add tuna, artichokes, olives, tomatoes, chilli and pepper.
  • Toss on low heat for 3-4 minutes.
  • Mix in the parmesan and basil, and serve immediately.

  1. This was a nice dish to make on a hot day. I am really happy to have a light way to prepare tuna. I thought that the taste was a little bit bland, so next time I will add more basil and something else- but not sure what- just to make it more of a "wow" dish. I love this idea, however, and will make again for sure. Thanks for posting this recipe!
     
  2. This was a quick and easy dish to make! It was yummy! The only thing I did different was, I didn't have artichokes on hand so I didn't use them. I also used more sun dried tomatoes than called for. But overall, I loved it! So did my family! It was a big hit! I served it with a fresh salad and it was absolutely perfect! Thanks for the recipe!

I live in Australia, and love to cook summery recipes that are relatively healthy. I don't believe in 'diet food' though- it has to taste great.
