Tropical Chilled Cream of Cucumber Soup

"This simple refreshing soup is great for luncheons or as a light starter for heartier fare. It was created by Joyce Wells of the Cayman Islands and is featured in her book "Taste of the Tropics". I often add a dash of green food colouring prior to chilling to enhance the appearance but it is certainly optional."

  • Coarsely chop cucumbers.
  • Boil onion in 1/2 cup water over medium heat for 10 minutes. Add chicken stock cubes, cucumber, cover and cook 10 more minutes.
  • Puree cucumber/onion mixture in blender until it resembles a rich cream. Stir in cream and lemon juice.
  • Chill soup for at least 2 hours but preferably overnight.
  • Taste chilled soup for seasoning, add salt & pepper to taste.
  • Serve in 4 chilled bowls and garnish with snipped chives if desired.

Moved to Florida 2 years ago from the Cayman Islands. Am adapting to my American home and love to cook. I miss my foody friends and am thrilled to have found an outlet for my culinary obsession. Hope to post some Island favourites for everyone to enjoy. If there are any other West Indians out there, when I upgrade, email me a note and ease my home sickness. I am addicted to this site. The first thing I do in the morning is check out Zaar...that is after feeding my precious dog, Kristi Girl, and brushing my teeth. Being single has its constraints for cooking but I invite friends for dinner so I have someone for whom I can cook. I get lots of company from Canada and Cayman and take out my culinary frustrations on them.
