- 1⁄2 cup white sugar
- 1⁄4 cup margarine, melted
- 3⁄4 teaspoon ground nutmeg
- 1⁄2 teaspoon cinnamon
- 1 pinch clove
- 1⁄2 cup milk
- 1 1⁄2 teaspoons pure vanilla extract
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 1 teaspoon orange zest
- 1⁄4 cup blueberries (fresh or unthawed frozen)
- 1⁄2 cup margarine, melted (divided)
- 2 teaspoons orange juice, fresh
- 1 teaspoon warm water
- 1⁄2 - 3⁄4 cup powdered sugar
directions
- Preheat oven to 375 degrees F. Grease 6 muffin cups.
- Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg, cinnamon and cloves in a large bowl.
- Stir in the milk and vanilla, then mix in the baking powder and flour until just combined. Fold in orange zest and blueberries. Fill the prepared muffin cups about 2/3 full.
- Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
- While muffins are baking, place 1/4 cup of melted margarine in a bowl.
- In a separate bowl, mix together remaining butter and 1/4 cup of powdered sugar, warm water and orange juice. Should be a relatively thin glaze.
- Remove muffins from their cups, dip each muffin in the melted margarine, then in the orange and powdered sugar glaze. Place on a wire rack and allow to dry for a few minutes.
- Meanwhile, add a few more tablespoons of powdered sugar to the glaze and stir to combine into a thicker glaze. Dip muffins in glaze and allow to dry again. You may choose to repeat this step a third time or simply serve muffins warm or cooled. Enjoy!
