Triple Orange-Glazed Blueberry Muffins

"I had an orange that needed using, so I came up with these muffins and at the last moment decided to addin some blueberries and threw together a glaze. I thought they turned out very nicely :)"

  • Preheat oven to 375 degrees F. Grease 6 muffin cups.
  • Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg, cinnamon and cloves in a large bowl.
  • Stir in the milk and vanilla, then mix in the baking powder and flour until just combined. Fold in orange zest and blueberries. Fill the prepared muffin cups about 2/3 full.
  • Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
  • While muffins are baking, place 1/4 cup of melted margarine in a bowl.
  • In a separate bowl, mix together remaining butter and 1/4 cup of powdered sugar, warm water and orange juice. Should be a relatively thin glaze.
  • Remove muffins from their cups, dip each muffin in the melted margarine, then in the orange and powdered sugar glaze. Place on a wire rack and allow to dry for a few minutes.
  • Meanwhile, add a few more tablespoons of powdered sugar to the glaze and stir to combine into a thicker glaze. Dip muffins in glaze and allow to dry again. You may choose to repeat this step a third time or simply serve muffins warm or cooled. Enjoy!
