Tri-Colour Veggie Burgers

"This is a very simple and tasty vegetarian recipe. It's quick to prepare and the patties can be eaten in a veggie burger or on their own! This is also oil-free if you use a non-stick frying pan."

  • 1 medium carrot
  • 1 medium zucchini
  • 12 medium brown onion
  • 2 egg whites
  • salt and pepper, to taste

directions

  • Grate or julienne vegetables.
  • Mix grated vegetables with egg whites; season.
  • Place about 2 tablespoons worth of mixture into a non-stick frypan, flatten it out slightly so that the burgers are about 1cm thick. Cook on both sides till golden brown and crispy.

  1. i was really excited for these but they did not turn out at all. they never got brown and crispy. i grated the veggies but they didnt really cook. the mixture was so watery it was impossible to turn a patty over i ended up adding a bunch of potatoe flakes to thicken it up and then dumping it all into the pan and then into the oven with some parmasean cheese, kind of like a tri color veggie and potatoe fritata. it was ok then but i was looking forward to the patties. i hope it works for others better.
