- 2 cups Bisquick baking mix
- 1⁄2 cup cornmeal
- 1⁄2 cup milk
- 3 tablespoons vegetable oil
- 1 lb ground beef
- 1⁄2 cup onion, chopped
- 1 1⁄4 ounces taco seasoning mix
- 8 ounces tomato sauce
- 1 (16 ounce) can refried beans
- 1 (4 ounce) can green chilies, drained
- 1⁄2 cup cheddar cheese, shredded
- 1⁄2 cup monterey jack cheese, shredded
- sour cream
- sliced green onion
- shredded cheddar cheese
directions
- Preheat oven to 375 degrees.
- Grease jelly roll pan. Mix baking mix, cornmeal, milk and oil until moistened, beat 30 seconds. Pat dough in pan. Bake 10 minutes.
- Cook and stir ground beef and onion until beef is brown, drain. Stir seasoning mix (dry), tomato sauce, beans and chilies. Spoon beef mixture onto crust, sprinkle with cheese.
- Bake 15 minutes or until hot. Garnish each piece with sour cream, green onions and cheese.

This was pretty easy to make... I really liked the crust - came out very good, almost like a big, giant, moist taco shell. The meat/bean mixture was a little bland for Mexican food, but that could be easily altered by adding more spices and/or chilis. I would replace the tomato sauce with salsa. I used WAY more than the suggested amount of cheese - both cheddar and Monterey Jack - I used about 3 times more than the recipe stated - but I'm cheesy. Posted picture with sour cream and sliced green onion garnish. Filling, easily fed four adults with left-overs. Made for The New Kids On The Block Tag Game 1/3/09.

I also like to go to auctions, yard sales and I am always buying items from the kids that they are selling to raise money for school, church or a youth group.
