Tomato Basil Soup

- 4 cups whole tomatoes or 4 cups crushed tomatoes
- 4 cups tomato juice
- 12 -14 fresh basil leaves (washed)
- 1⁄2 - 1 pint heavy whipping cream
- 1⁄2 cup butter
- salt & pepper
directions
- Puree whole tomatoes or crushed tomatoes in blender or food processor. I prefer to have a few timy pieces of tomatoes so that it isn't totally smooth.
- Melt butter In a large pan.
- Add tomatoes to pan leaving about 1 cup still in blender or food processor.
- Place basil in blender or processor and blend to chop up basil.
- Pour remaining tomatoes and basil into pot and add tomatoe juice.
- Stir in cream and heat. Do not boil.
- Salt and peper to taste.
- Can add non fat whipping cream in place of heavy cream and adjust amount of basil to taste.
