Tomato Basil Sauce

"This was requested by a friend of my DH for his birthday dinner. He is rather picky and he and my DH (even more picky) loved it. I had a difficult time finding a basic Tomato Basil Sauce recipe here on zaar. So I came up with my own after looking at several others. I used canned tomatoes because I did not have easy access to fresh, however, you can use fresh if you want. I also served over whole wheat penne pasta. I hope you enjoy!"

  • Drain the canned diced tomatoes, reserving the juice in a separate container.
  • In a large pot, saute the onions and garlic in olive oil until the onions are translucent.
  • Add the reserved juice to the pot along with the Splenda, salt and pepper. Allow to simmer until liquid is reduced to about half, about 30 minutes.
  • Add the diced tomatoes and chopped basil, and allow to simmer on low heat for 2 hours or until thickened.
