- 3 (28 ounce) cans diced tomatoes with juice or 8 lbs fresh tomatoes, seeded and diced
- 1 large onion
- 1⁄4 - 1⁄3 cup fresh basil, chopped
- 3 garlic cloves
- 1 teaspoon Splenda sugar substitute
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
directions
- Drain the canned diced tomatoes, reserving the juice in a separate container.
- In a large pot, saute the onions and garlic in olive oil until the onions are translucent.
- Add the reserved juice to the pot along with the Splenda, salt and pepper. Allow to simmer until liquid is reduced to about half, about 30 minutes.
- Add the diced tomatoes and chopped basil, and allow to simmer on low heat for 2 hours or until thickened.
