  • Peel, seed and chop the tomatoes.
  • Chop the onion and pepper.
  • Finely mince the cilantro and chives.
  • Put a 12-in saucepan in medium. Add the oil, sauté the onion and the peppers. When soft, add the tomato, reduce to low.
  • Add the water, cumin, salt, pepper, and lemon. Turn off.
  • Add the cilantro and chives.
  • Taste and correct.
