This is a little different from the other Texas Caviar recipes posted. It's really easy and delicious. I also sometimes add chopped onion and/or cilantro. This can be enjoyed with tortilla chips, on top of grilled chicken, or rolled up in a tortilla or pita bread. My favorite lunch is to spread hummus on a pita bread and then top with Texas Caviar. Yum!
- 16 ounces salsa (you can use a hotter salsa than you normally would, because it gets diluted with the other ingredien)
- 1 can corn, drained and rinsed
- 1 can black beans, drained and rinsed
- Mix all ingredients together.
I love this over brown rice for a super easy, healthy, meatless meal! Some cheddar cheese, sour cream or sliced green onions on top only make it better.
